Hey all! This is the first time I’ve decided to participate in What I Ate Wednesday (WIAW). Please note, my Wednesday eats were definitely not typical; hence “tonsillitis edition.” I normally eat at least 6x the amount of food shown, and definitely don’t consume soup and smoothies all day long ’cause that’s just so blah!! But I will take healthy, filling green monsters over a Boost or Ensure anyday! Hopefully soon enough I’ll be able to participate in the actual WIAW once my eats are back to normal.
I woke-up this morning with a sore throat. I went into work, where I had the nurse practitioner take a look at my throat. Sure enough, my tonsils are swollen, inflammed, and… gross! She diagnosed me with tonsillitis and strep throat, signed off a prescription and told me to go home, rest, get plenty of fluids, and start the treatment.
My tonsils are hugely swollen, so there was no fitting solid food down there… Trust me, I tried! (That TJ’s toaster waffle did NOT go down… Owwie!) So it’s been…

Smoothies, smoothies, smoothies! My favourite being the Nutella Green Monster creation I made this evening… Mmmm!
- 1 – 1.25 cups of vanilla almond milk
- 1 frozen banana
- Handful of baby spinach
- 1 tbsp hazelnut butter
- 1 tbsp cocoa powder
- 1 tbsp flax
Combine all ingredients into blender. Blend until desired consistency – for sick peeps with sore throats, this means blended until real smooth.

I do not like taking medication, but anything that helps to decrease the swelling that is preventing me from eating solids is A-OK with me!
I’m already starting to feel better, so I’m hoping to be able to eat some formed foods tomorrow. I don’t know how people can do purée diets… All I can think of is all the food I want to make (and eat) once I’m feelin’ better!
