PB Cup Balls & Life Changes

Last night I got mad cravings for Reese’s Peanut Butter Cups, which I always associate with this time of year (i.e. around Halloween).

I contemplated running the whole 150 metres to the grocery store to grab some. But my guilty conscious pulled me back. Oooooooh right, I’m not supposed to be spending money on putting CRAP into my body!

Sugar and multiple syllable things made in a lab? I’ll pass.

I also really didn’t feel like spending the night with a massive lactose-induced tummy ache.

So I broke out the food processor and whipped up my own substitute.

This one is out of the park good!

PB Cup Balls

Gluten- and dairy-free. Pretty sure this is what a PB cup would taste like if you smashed it and rolled it into a tasty little ball.

1/2 cup of peanut butter
5 tbsp pure maple syrup
3 heaping tbsp coconut flour
1/4 cup of cocoa nibs (or dairy-free chocolate chips)

Put the first three ingredients together in a mini food processor. Grind until consistency is smooth and dough-like. Add in cocoa nibs. Chop until chips are small chunks.

Scoop out dough with a spoon and shape into small balls with hands. Makes 6-8 small balls. Place on plate and freeze for 1/2 hour. Serve.

Friggin’ yum!


I’m in the midst of contemplating a big, big life change. It’s been on my brain for awhile because I’m just not happy where I am right now. I’ve been really unhappy in my career for sometime, which I decided to deal with by going back to school. I’m also unhappy living where I live. With my brother moving up to Dawson Creek, a town up north, it really got me thinking if maybe I just need a huge change of scenery.

We shall see. Moving wouldn’t be cheap. I also know that if I moved it would make it a whole lot easier to pursue the career I ultimately want to do. That makes me think that I should really just do it. And do it now while I have the chance.

It also means going somewhere I don’t know anyone, that’s really far away from my family, and having to completely start fresh. But I did that a couple years ago when I moved up north, and it was the best experience of my life.

What do you think… Is the financial cost worth completely changing my life and starting fresh in a new place? Anyone else been in my position before?

What I Ate Wednesday – Tonsillitis Edition

Hey all! This is the first time I’ve decided to participate in What I Ate Wednesday (WIAW). Please note, my Wednesday eats were definitely not typical; hence “tonsillitis edition.” I normally eat at least 6x the amount of food shown, and definitely don’t consume soup and smoothies all day long ’cause that’s just so blah!! But I will take healthy, filling green monsters over a Boost or Ensure anyday! Hopefully soon enough I’ll be able to participate in the actual WIAW once my eats are back to normal.

I woke-up this morning with a sore throat. I went into work, where I had the nurse practitioner take a look at my throat. Sure enough, my tonsils are swollen, inflammed, and… gross! She diagnosed me with tonsillitis and strep throat, signed off a prescription and told me to go home, rest, get plenty of fluids, and start the treatment.

My tonsils are hugely swollen, so there was no fitting solid food down there… Trust me, I tried! (That TJ’s toaster waffle did NOT go down… Owwie!) So it’s been…

This whole container of soup:

Smoothies, smoothies, smoothies! My favourite being the Nutella Green Monster creation I made this evening… Mmmm!


  • 1 – 1.25 cups of vanilla almond milk
  • 1 frozen banana
  • Handful of baby spinach
  • 1 tbsp hazelnut butter
  • 1 tbsp cocoa powder
  • 1 tbsp flax


Combine all ingredients into blender. Blend until desired consistency – for sick peeps with sore throats, this means blended until real smooth.

I do not like taking medication, but anything that helps to decrease the swelling that is preventing me from eating solids is A-OK with me!

I’m already starting to feel better, so I’m hoping to be able to eat some formed foods tomorrow. I don’t know how people can do purée diets… All I can think of is all the food I want to make (and eat) once I’m feelin’ better!

Cherry Sweet Tequila

If you weren’t aware, yesterday was the official first day of summer in B.C.

I live right by the road leading to one of the top summer destinations in the area. This means, the first day I have to start taking backroads to get home… Holy traffic jams!!

Since it’s the weekend, and since I can’t handle driving in traffic, it’s time to break out the icey cold summer drinks to cool down.


Cherry Sweet Tequila
Serves one, two, three, floor…

  • 1 shot of tequila (I used SkinnyGirl margarita, ’cause it was in my fridge.)
  • “Splashes” of pure orange juice, or roughly 1/2 a cup
  • 4-6 frozen cherries
  • Ice

Blend. Adjust ingredients to desired consistency. Then serve. Or drink it yourself, and giggle because it only takes one drink to get you tipsy. You’re such a lightweight…


Here’s the thing with girly drinks… I like ’em. But I don’t like drinking something that tastes like pure sugar. This was perfect ’cause it simply tasted like tequila and fruit.

Tequila and fruit… Sounds like summer to me!

Yeaaaaaaaaaaa, I drank it out of a wine glass. Does it make me classier?!

Today’s another warm one, and I’m thinking iced coffee + sun roof open + running errands is on the agenda.
